Look, the orange is prepared from the start, hes got a chick in his pocket, which is amazing cause they never stop cheeping(though they may be like other birds that stop singing when their put in the dark). The egg the bald guy selects is sleeved from the start and replaced with another egg, which was most likely hollowed out to make it easier to vanish. The orange makes a great cover for whatever reel he's got going. After that its just cutting open a prepared orange. The kid didn't switch it, Chris likely did while they were off shopping for the other items.
